Winter Spice Granola w/ Almonds

Cinnamon, nutmeg and ground cloves give a wonderful new flavour profile to your morning granola. It’s starting to look like the holidays out there, so it’s time to start spicing things up accordingly. Adding warming spices can turn any regular recipe into something nostalgic and reminiscent of winter’s wonders.

WINTER SPICE GRANOLA w ALMONDS

Course Breakfast
Keyword granola
Prep Time 10 minutes
Cook Time 1 hour 5 minutes
Total Time 1 hour 15 minutes

Ingredients

  • 3 Cups rolled oats
  • 1 cup Sliced Almonds
  • 1 cup shredded coconut unsweetened *optional
  • ¼ cup coconut sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ⅛ tsp ground cloves
  • 1 dash pink salt
  • ¼ cup maple syrup
  • ¼ cup vegetable oil

Instructions

  1. in a large bowl, combine rolled oats, coconut, sliced almonds, coconut sugar, cinnamon, nutmeg and cloves. Add in maple syrup and vegetable oil and mix until well combined.
  2. Spread evenly on an ungreased baking sheet and bake at 250'F for 30 minutes. After 30 minutes, remove from oven, turn with a spatula and place back in the oven for another 35 minutes.
  3. Cool completely and then break up your granola into large and smaller chunks and store in an airtight container.

Leeks are seriously underrated if you ask me. They Leeks are seriously underrated if you ask me. They’re incredibly easy to grow, require little maintenance and will last all season long. I cook with leeks regularly this time of year and consider them a trustworthy friend in the garden knowing they’ll hang around all winter and be available whenever they’re needed.

In the garden are two varieties right now: Lancias (pictured here) and giant Musselburghs, the latter being my favourite by far. Musselburgh leeks are a Scottish heirloom with a nice mild flavour and, as their name suggests, a rather noteworthy size! Quite fun to pull out of the ground, too...if you don’t mind falling backwards tug-o-war style.
