This recipe was developed for the Vitamix Personal Cup Adapter as a single serving, but can be doubled up in your full sized blender model (see notes).

Why This Recipe Works
Have you ever tried a lassi? It's a traditional spiced yogurt drink from India made sweet or savory. You're probably familiar with the mango lassi, but here I've used what spring has to offer: tart rhubarb and sweet white peaches.
These two flavours are tempered with a non-dairy yogurt base, rounded out with maple syrup and finished off with a subtle hit of ground cardamom. The aromatic and resinous flavour of this Eastern spice works so well with rhubarb and peach. It's a unique, refreshing and stunningly tasty blend.

Ice Chunks: Use quality ice made from filtered water—it will taste better.
Fresh Peaches: You can use white peaches, or regular yellow flesh peaches. Use ripe peaches for best flavour. To determine whether a peach is ripe, gently squeeze it—if it is slightly soft and yields to the pressure of your hands, it's good. Ripe peaches should also smell fruity and have a deep colour to the skin.
Fresh Rhubarb Stalks: red or green rhubarb varieties will work for this recipe; there is no major flavour or sweetness difference, although the ruby pink colour of red varieties are more attractive in this drink when blended. Make sure to wash the stalks well and remove all the leaves because they are toxic to consume. See the recipe FAQs below for information on choosing the best rhubarb for this recipe.
Unsweetened non-dairy yogurt: I like to use a coconut milk based non-dairy yogurt as I find they are more creamy and rich than almond or soy based versions. However, any variety of non-dairy or regular yogurt will work.
Pure Maple Syrup: you can use liquid honey or your sweetener of choice.
Ground cardamom: this is a popular spice in many Indian dishes. It has a slightly resinous flavour, however, it does not come through very strongly in this recipe. If you prefer, you can omit it.

STEP 1: Cut the peaches and rhubarb into 1" pieces.
STEP 2: Add the ingredients to your blender in the order listed (reverse the order for regular blenders). Blend on high for 30 seconds.
STEP 3: Garnish and serve as desired.

Helpful Tips
Use a high powered blender: This is key to getting this lassi to blend smoothly. As mentioned, I use a Vitamix, however you can use your preferred brand of high powered blender.
Using the Vitamix Personal Cup Adapter: Add the ingredients in the order listed in the recipe card. This helps make the blending process smooth and efficient.
For regular blenders: place the liquids in first and the ice last—basically reverse the order of the ingredients listed. Having heavier items (like ice) on top will help push the mixture into the blades and create a more even blend and prevent your blender from stalling.
Source quality ingredients: the quality of the ingredients is important and will make this lassi better if you choose for the best produce available.
Use cold yogurt: I prefer this drink cold and always use refrigerated non-dairy yogurt.
Make Ahead and Storage
Make Ahead: you can prepare the peaches and rhubarb in advance and refrigerate them in a covered container several hours before you plan to make this recipe.
Storage: like most blended drinks, this recipe is best consumed right away; it doesn't store well.
Frequently Asked Questions
There are several types of rhubarb and typically only red or speckled varieties are found in grocery stores. The colour of the stalk doesn't indicate it's ripeness or sweetness; choose stalks that are firm with a slight sheen and free of blemishes or bruises. Most rhubarb is sold without its leaves, however, if they are still attached, make sure they aren't wilted or rotting—but make sure to remove all of the leaves and the top where the leaves attach to the stalk before using. Rhubarb leaves are toxic to consume (they are not edible).
Rhubarb is one of the first vegetables to appear in spring. That's right, rhubarb is actually a vegetable and not a fruit. Most people tend to treat rhubarb like a sweet fruit because it goes so well in desserts and other sweet recipes like this lassi.

Vegan Rhubarb Peach Lassi
Ingredients
- ½ cup ice chunks
- 1 large peach, washed
- ⅓ cup chopped rhubarb , washed (about ½ small stalk)
- ½ cup unsweetened non-dairy yogurt
- 2 tablespoon pure maple syrup, or honey
- ⅛ teaspoon ground cardamom
Instructions
- Cut the peaches and rhubarb into 1" pieces.
- Add the ingredients to your blender in the order listed above (reverse the order if you are using a regular stand blender).
- Blend on high for 20-30 seconds or until smooth. Garnish and serve as desired.
