A non-dairy version of the traditional sweet Lassi featuring tart rhubarb, sweet white peaches, non-dairy yogurt and a subtle hit of cardamom. A unique, refreshing and delicious blend!
Cut the peaches and rhubarb into 1" pieces.
Add the ingredients to your blender in the order listed above, starting with the ice chunks and ending with the ground cardamom. Blend on high for 30 seconds. Garnish and serve as desired.
Use a thick non-dairy yogurt for a super creamy texture. This recipe was designed for the Vitamix Personal Cup Adapter as a single serving, but can be doubled up in your full sized blender model.
