Peach Rhubarb Lassi - The Simple Green

WHITE PEACH & RHUBARB LASSI

A non-dairy version of the traditional sweet Lassi featuring tart rhubarb, sweet white peaches, non-dairy yogurt and a subtle hit of cardamom. When using the Vitamix Personal Cup Adapter, cut the ingredients into 1" pieces and add the ingredients to the blender cup in the order listed below. A unique, refreshing and delicious springtime blend!

Ingredients

  • 1/2 cup ice chunks
  • 2 small white peaches or 1 large yellow peach
  • 1/3 cup chopped rhubarb
  • 1/2 cup unsweetened non-dairy yogurt
  • 2 tbsp pure maple syrup
  • 1/8 tsp of ground cardamom

Optional garnish

  • chopped pistachios
  • sliced peach
  • 2 tbsp unsweetened non-dairy yogurt

Instructions

  1. Cut the peaches and rhubarb into 1" pieces.
  2. Add the ingredients to the Vitamix blender cup in the order listed above, starting with the ice chunks and ending with the ground cardamom. Affix the adapter to the blender cup and place on your Vitamix base as per the product directions.
  3. Blend on high for 30 seconds. Serve and garnish as desired. Alternatively, place the flip-top lid on the blender cup and pop it in the fridge, or take it along with you.

Recipe Notes

Use a thick non-dairy yogurt for a super creamy texture (I use a coconut milk yogurt). If you're yogurt is light, add three tbsp of full fat coconut milk to the 1/2 cup measure of yogurt. This recipe was designed for the Vitamix Personal Cup Adapter as a single serving, but can definitely be doubled up in your full sized model. The Personal Cup Adapter comes with two 20-oz cups and two flip-top lids which are dishwasher safe (big plus)!
